Redstone Cabernet Franc

Redstone Winery, located on the Beamsville Bench in Niagara, is part of the Tawse Winery portfolio and shares its commitment to sustainable and often organic farming practices. The site benefits from limestone-rich soils and the moderating influence of Lake Ontario, creating ideal conditions for growing Cabernet Franc.

Cabernet Franc thrives in Niagara’s climate, where it can achieve ripeness while retaining natural acidity and aromatic complexity. The wine is typically fermented in stainless steel with careful extraction to manage tannins, followed by ageing in French oak barrels (a portion new) to add structure and subtle spice.

The style balances fruit expression with the grape’s signature savoury and herbal characteristics, resulting in a wine that is both structured and approachable.

Tasting Notes
Colour: Medium to deep ruby
Nose: Aromas of red and dark berries, including cherry and blackberry, with notes of dried herbs, bell pepper, and subtle spice
Palate: Medium-bodied, with fine tannins and bright acidity; flavours of red fruit, plum, and savoury herbal notes, supported by light oak influence
Finish: Smooth and persistent, with lingering fruit, spice, and a lightly earthy character

Cellaring & Pairings
Enjoy now or cellar for 5–8 years to allow further integration and development.
Pairs well with roasted poultry, pork, and grilled meats. Also complements herb-driven dishes, roasted vegetables, mushroom preparations, and semi-firm cheeses.
