A fresh, sparkling way to discover cloudy sake

If your idea of sake is something crystal clear, high in alcohol, and reserved for sushi night, Sanuki Cloudy Sake offers a very different introduction.

Produced by Kawatsuru Sake Brewery in Kagawa, Japan, Sanuki Cloudy comes from a brewery whose history dates back to 1891 in the city of Kanonji. Kawatsuru takes its name from the image of a crane descending on the nearby Saita River, whose underground water has long been used in the brewery's sake production.

Sanuki Cloudy Summer Fizz

Ingredients

  • 2 oz Sanuki Cloudy Sake
  • 1 oz fresh yuzu juice
    or substitute fresh lemon juice with a little lime
  • ½ oz honey syrup
  • 2 to 3 oz chilled soda water
  • 2 to 3 cucumber slices
  • Fresh mint
  • Ice

Method

Gently muddle the cucumber and mint in a tall glass.

Add the Sanuki Cloudy Sake, yuzu juice, and honey syrup. Fill the glass with ice and stir gently to combine.

Top with chilled soda water, then give the cocktail one gentle lift from the bottom with a bar spoon to incorporate everything without losing too much carbonation.

Garnish with fresh cucumber and mint.

The result: light, gently creamy and sparkling, with bright citrus, cooling cucumber, fresh mint, and just enough honey to soften Sanuki Cloudy's naturally tangy character. A refreshing introduction to sake for newcomers, and a completely different way for longtime sake drinkers to enjoy it.
