Sheringham Aquavit

Sheringham Akvavit is produced by Sheringham Distillery in Langford, British Columbia, founded by Jason and Alayne MacIsaac. Master Distiller Jason MacIsaac spent more than 20 years as a chef, and that culinary background continues to shape Sheringham's approach to spirits, particularly its emphasis on balancing botanicals and incorporating ingredients that reflect the Pacific Northwest.

Aquavit, or akvavit, is a traditional Scandinavian spirit typically defined by prominent caraway and/or dill. Sheringham takes that Nordic foundation and gives it a coastal B.C. identity. Jason developed the recipe after tasting widely through the category, eventually settling on a botanical combination of caraway, dill, star anise, angelica, lemon, orris root and winged kelp.

Tasting Notes
Nose: Fresh dill and bright citrus lead, followed by star anise, caraway and subtle coastal salinity. The overall impression is fresh and herbaceous rather than heavily medicinal.

Palate: Savoury caraway brings a distinctive rye-bread warmth, joined by dill, citrus and anise. The texture is rounded and mouth-coating, with the winged kelp contributing a delicate mineral, ocean-inspired edge.

Finish: Long and gently warming, with lingering caraway, sweet spice, herbs and a subtle kiss of salinity.
