Kawatsuru Sanuki Cloudy Sake

Kawatsuru Sanuki Cloudy is produced by Kawatsuru Shuzo in Kagawa Prefecture, Japan. The brewery takes an unconventional approach to this expression, using approximately three times the usual amount of koji, including white koji, to develop considerably more acidity and sweetness than you would typically encounter in sake. The result is a cloudy, creamy drink the brewery itself compares to a Japanese cultured-milk beverage.

Tasting Notes
Nose: Fruity and gently aromatic with fresh citrus, fermented rice and a distinctive yogurt-like character reminiscent of a cultured milk drink.

Palate: Creamy and softly textured with sweet rice and koji flavours balanced by lively lemon-like acidity. The combination is sweet and tangy rather than simply sugary, with subtle umami adding depth.

Finish: Refreshing and lightly tart with lingering citrus, creamy rice and gentle fermented notes, finishing surprisingly clean given its rich appearance.
