Thistle & Weed is a South African winery focused on producing terroir-driven wines that reflect the unique landscapes and indigenous flora of the Cape winelands. Each wine in the range is inspired by resilient local plant species, with “Springdoring” referencing a hardy thorn tree native to the region, symbolizing adaptability and survival in challenging conditions.

The Chenin Blanc is sourced from selected vineyard sites in the Western Cape, where warm daytime temperatures and cooling maritime influences help develop ripe fruit flavours while preserving freshness. Chenin Blanc thrives in these conditions, producing wines with both aromatic intensity and lively structure.

Winemaking is centered on minimal intervention and freshness. Fermentation takes place primarily in stainless steel to retain purity of fruit and varietal expression, while careful lees contact may be used to enhance texture and balance without overshadowing the wine’s bright character.
