Tawse Sketches Of Niagara

Tawse Winery, located in the Niagara Peninsula, is a leading Canadian producer known for organic and biodynamic farming practices. The winery focuses on expressing individual vineyard sites and sub-appellations across Niagara, with a strong emphasis on sustainability and minimal intervention.

The “Sketches of Niagara” series highlights a blend of fruit from multiple vineyards, offering a regional snapshot of Niagara terroir. Chardonnay thrives in this cool climate, where long growing seasons and limestone-rich soils contribute to wines with vibrant acidity and mineral character.

Fermentation typically takes place in French oak barrels, followed by ageing on lees to build texture and complexity. A portion of new oak is used, but the style remains balanced and restrained, allowing fruit and site expression to remain central.

Tasting Notes
Colour: Pale gold with bright highlights
Nose: Aromas of apple, pear, and citrus, with notes of vanilla, toast, and subtle mineral undertones
Palate: Medium-bodied, with flavours of orchard fruit, lemon, and light stone fruit, supported by fresh acidity and a refined, slightly creamy texture
Finish: Clean and persistent, with lingering citrus, mineral notes, and subtle oak

Cellaring & Pairings

Pairs well with roasted chicken, seafood (especially shellfish), and creamy pasta dishes. Also complements soft to semi-firm cheeses and dishes with buttery or lightly spiced sauces.
