A 2011 Caol Ila from independent bottler Elixir Distillers, matured in a batch of four ex-sherry butts and matured for a decade, before being bottled in 2021. Aromas of candy floss on a seaside pier, fresh lavender, toasted crumpets, maple syrup and fresh basil fill the nose, complemented on the palate by notes of sticky caramel sauce, saltwater taffy, sugar-coated hazelnuts, ashy smoke, peppermint tea, blossom honey and plum jam throughout the palate.
