Pietradolce Etna Bianco DOC

Pietradolce is a respected Etna producer focused on expressing the unique terroir of Mount Etna through indigenous grape varieties and high-elevation vineyards. The winery’s vineyards are planted on volcanic soils formed from centuries of lava flow, contributing to the wines’ hallmark minerality and tension.

Etna Bianco DOC is made primarily from Carricante, a native Sicilian white grape known for its naturally high acidity and ability to convey terroir. The vineyards are situated at significant altitude on the eastern slopes of Etna, where cool nights and strong temperature variation help preserve freshness and aromatic precision despite Sicily’s warm climate.

Fermentation is typically carried out in stainless steel, with lees ageing often used to enhance texture and complexity. Oak influence is minimal or absent, allowing the volcanic and mineral character of the wine to remain central.

Tasting Notes
Colour: Pale straw with green reflections
Nose: Aromas of lemon, green apple, and white peach, with notes of fresh herbs, saline minerality, and volcanic stone
Palate: Light- to medium-bodied, with crisp acidity and flavours of citrus, orchard fruit, and subtle almond; pronounced mineral tension adds structure and precision
Finish: Long and refreshing, with lingering citrus, saline notes, and smoky volcanic minerality

Cellaring & Pairings
