Okunomatsu Brewery, founded in 1716 in Fukushima Prefecture, Japan, is one of the country’s most respected and historic sake producers. With over three centuries of brewing heritage, the brewery is renowned for combining traditional brewing philosophy with modern precision to create sake that emphasizes purity, elegance, and regional character.

The Junmai Daiginjo “Navy Blue” is crafted using highly polished premium sake rice, with the outer layers milled away to enhance refinement, aromatic clarity, and smoothness. As a junmai daiginjo, the sake is brewed without the addition of distilled alcohol, allowing the purity of the rice, water, yeast, and koji to remain central to the final profile.

Slow, low-temperature fermentation encourages the development of delicate fruit and floral aromas while preserving freshness and balance. Fukushima’s pristine water sources and cool brewing climate contribute to the sake’s clean structure and polished finish.

The result is a sophisticated and food-friendly sake that balances elegance, texture, and aromatic complexity.
