Independent bottler, The Red Cask Co. specialises in whiskies that have matured in first fill sherry casks. In this case, whisky produced at Speyside distillery, Dailuaine, which is known for its creamy, fruity spirit. It was matured for 9 years, which includes a secondary maturation period in a first fill Oloroso sherry hogshead, and was bottled at cask strength, with no added colour or chill filtration. Expect a complex dram full of fruit and spice notes. Nose – Spices, Barley Blossom, Stewed Rhubarb and Hints of Butterscotch. Palate – Warm Suggestion of Peppery Honey, Sweet Apples, Apple Crumble and Cinnamon. Finish – Smooth Spices with traces of Vanilla Extract.
