Caol Ila 2007 15 Year Old (Signatory Vintage)

A terrific single malt from Caol Ila, distilled in 2007 and matured for 15 years, with two of those years spent finishing in a first-fill oloroso sherry butt. The smoky, Islay Scotch whisky was bottled by indie bottlers Signatory Vintage in 2023 for its Cask Strength Collection. An outturn of only 695 bottles. Nose: Smoked streaky bacon, with dried figs, some toasted almonds, vanilla, and spice. Palate: Sherry character bringing a barbecue smoke quality to the coastal peat, with drizzles of caramel, raisin-studded fruit compote, and shavings of chocolate. Finish: Sweet sherry and smoke linger, with some drying oak. -Master of Malt
